Premium Bancha Fukamushi 深蒸し茶 SHIZUOKA

Premium Bancha Fukamushi (深蒸し茶) is a deep-steamed tea. The leaves immediately after picking are treated with hot steam to stop the oxidation process and maintain balanced taste, high nutrition level as well as bright green color.

The usual steaming process of green tea takes about 30-40 sec. In comparison, Asamushicha is steamed for 20-30 sek. and Fukamushicha for 1 min. or more. If the leaves undergo the longer steaming process, the prefix “Fukamushi” before the name of the tea indicated that the tea leaves were steamed for longer than usual time, for example Fukamushi Sencha. This tea processing method is most common for Shizuoka prefecture in Japan and usually Sencha, Gyokuro and Bancha leaves are used for longer steaming.

Duration of the steaming process has a strong impact on the final taste – more intensified flavor and less bitterness. Longer steaming softens the leaves what makes it easier to break and pass the components from the leave to the brew. The brew is darker in color with more residue on the bottom of the cup. And this is definitely not a disadvantage!

This tea is rich in C vitamin, microelements and antioxidants, especially catechins, which help our body to maintain youth and protect cardiovascular system. Catechins positively affect the digestion system, which is why it is recommended to drink Bancha 30 min before or after the meal. Due to its mild taste, it goes well with food, especially tempura and seafood.

 

Bancha and Sencha differences

For the average consumer it is very difficult to distinguish Bancha from Sencha tea.

Both teas are grown and processed the same way and during the production the tea leaves are steamed and dried immediately after harvest to prevent oxidization. One of the differences is the size and texture of the selected leaves. For Sencha the leaves are picked only from the higher parts of the bush, where the leaves are smaller and softer, while Bancha is produced from the bigger in size and thicker leaves, picked from lower parts of the bush in the second or third harvest. Our Bancha comes from the second flush.

Amount of tea leaves: 3-4 g

Amount of water: 150 ml

Water temp.: 90 degrees

Brew for: 30 sec.
